SALTED LIME RICKEY

This drink needs to be cold – like, really cold. If possible use glasses from the freezer and make sure that your ice is dry.

INGREDIENTS

50 ML/2 FL. OZ. PLYMOUTH GIN ∙ 15 ML/½ FL. OZ. LIME JUICE
1 G/1/32 OZ. SALT ∙ SODA, TO TOP UP

METHOD

Fill a highball glass with chunks of ice; add the gin, lime and salt, then give it a good stir with a bar spoon. While still stirring, pour the soda water in, leaving a small space at the top. Add more ice, stir some more, then finish with a wedge of lime.
