INGREDIENTS
3 tablespoons rum
3 teaspoons apricot liqueur
4 teaspoons lime juice
4 teaspoons sugar syrup
1 egg yolk
ice cubes
100ml soda water
dried apricot, to decorate
METHOD
Put the rum, apricot liqueur, lime juice, sugar syrup and egg yolk into a food processor or blender and blend.
Strain into a Collins glass and fill the glass with ice cubes before topping up with the soda water. Decorate with a dried apricot on a cocktail stick and serve with a straw.
