A classic mojito. This should really be a Friday night staple.
- 50ml dark rum
- 2 lime wedges
- 2 bar spoons sugar
- 9 fresh mint sprigs
- a dash of soda water
- sugar syrup
- 1 – 2 dashes of Angostura bitters (optional)
- Smush the lime sugar and mint in the bottom of a sturdy highball glass, fill with plenty of ice and add the rum.
- Add a dash or two of sugar syrup, garnish with a final mint sprig.
- and enjoy.
